Peanut Butter Snack Balls (free printable)

Since the New Year, I have been trying to consistently meal prep for the upcoming week. Some weeks I have, and some I haven't. I am really trying to get back on a healthy schedule. Although time consuming, meal prepping makes it easier to be more successful staying on track.

Lately, I still feel so crazed and pressed for time. I find myself skipping meals or waiting too long to eat and then ending up starving. By the end of the day, I settle for whatever will be the quickest and that usually leads to not so healthy options.

So, I decided I needed to make some grab and go snacks so I don't have the excuse of not having the time to make something.

These snack bites are so easy and so delicious. I also love them as a healthy dessert option :)

What you need
2 cups old fashion oats
1/2 cup of chocolate chips
1 cup peanut butter
1/3 cup honey
1 tablespoon vanilla extract

1. Mix all ingredients together
2. Let chill in fridge for at least 30 minutes
3 Use a tablespoon scoop to make small balls

TIP- I divided up the balls into sets of 3 or 4, wrapped them in tin foil, and stored them in the fridge to make it even easier to literally grab and go :)

Summer is quickly approaching and I am feeling the pressure to "lose the baby weight." I actually really hate that expression. Like, hey I just grew a human inside of my body for the past 10 months, now let me find the closest crowded mall and "lose the baby weight" right there :)

Losing the baby weight is something I want to do for myself. Feel confident. Love and appreciate the body that gave me the two most beautiful babies and greatest gifts in my life.

New Year, New Mama??

Well, not quite.

I have to admit the last couple weeks had got me feeling a little down. The craziness of the holiday season can be overwhelming. Not to mention the stomach bug rampaging through our house, followed by a nasty virus that baby girl just couldn't kick.

OH. Did I mention I turned the dirty "30" on New Years eve?! UGH!

Anyways let's start with one thing at a time. The holidays. I love love love Christmas and the whole season around it. I love doing all the decorating, baking, shopping, wrapping. I really do enjoy it. I am by no means an organized person in life in general. But the holiday season I am usually very good with getting an early start and doing extra special things.

But that is just it. I try to do it all and above and beyond.

I can do anything but I can't do EVERYTHING.

Every year we have a huge family party with all of my cousins and aunts and uncles. We always do a week before Christmas. Which we had to miss this year due to the stomach bug. I was so totally sad to have missed it :( I don't think I have ever missed one in my entire life time.

First the baby girl got the bug. Then my husband. Then me. But thank my lucky stars that my baby boy never got it.

Now for the last week, baby girl has been completely miserable with a nasty virus. Waking up crying at all hours of the night. Just not her normal spunky and playful self. I do enjoy the extra cuddle time and hugs with her. But the crying oh the crying I just can't take much more of it. I mean usually she is climbing anything and everything and I am chasing her around all day. Am I crazy to say I want that little girl back?! It makes me so sad to see her so uncomfortable.

But this happy, laughing face right here. This is what was keeping my sanity. Talking to this little man and just having him be a complete love bug. I just can't take his giggling. Melts my heart.
Did I mention this kid sleeps 10 to 12 hours a night. I mean come on.

My mom always told my brothers and I, "I don't have a favorite child." However, she did freely admit to having different favorites at different times. One was in trouble this week and the other was doing something good. (Which we still like to take credit for as adults.) We were never all giving her a hard time at the same time. So I agree I definitely do not have a favorite child either. But I would be lying if I said that baby boy wasn't keeping my sanity this week :)

2 under 2 has its perks! This is definitely one of them!!!!

So bring it on 2017!

I work with a fabulous bunch of ladies who also keep my sanity. The thing I love most is that we are in all different places in our lives, therefore all have different perspectives. A few are married with children, a few are single or in relationships, or married and expecting first baby. So we discuss all topics from A to Z, which I love.  

Of course the topic of New Year's Resolutions has come up this week. There's something about a fresh new start that is just that. REFRESHING.

However, our lovely yogi friend has advised us that we shall set intentions for 2017 instead of resolutions.

Resolution has an almost negative connotation. It sounds as if we have a problem and we need to find a resolution. We don't have a problem, we just think there are things that we could and want to do better for the upcoming year.

Setting positive intentions and reminding ourselves of these intentions on a daily basis. This is how I plan to embrace, conquer and thrive 2017.
