Snow Day means Mini Bundt Cakes for Breakfast!!!

Wahoo!! Snow day! I will take full advantage of this day to bake, cook and play with my family!

I wanted to make something sweet and special for breakfast... I was thinking donuts but trying to stick to a healthier option while still being delicious!

These mini cakes are so so good and guilt free which makes them even better!!

What we need

- 2 cups flour
- 3/4 cup sugar
- 2 teaspoons of baking powder
- 1/4 teaspoon ground all spice
- 1/4 teaspoon ground cinnamon
- 1 teaspoon of salt

- 3/4 cup milk (I like almond milk)
- 2 eggs (beaten)
- 2 teaspoons of vanilla extract
- 1 tablespoon of melted butter

- 1 cup of confectionery sugar
- 2 tablespoons of hot water
- 1/2 teaspoon of almond extract

How we do it...

Step 1
Preheat oven to 325 degrees. Grease muffin tin.

Step 2
Mix all dry ingredients. (2 cups flour, 3/4 cup sugar, 2 tsp baking powder, 1/4 tsp ground all spice, 1/4 tsp ground cinnamon, 1 tsp salt)

Step 3
Add to the dry mixture 2 beaten eggs, 3/4 milk, 2 tsp vanilla extract, 1 tablespoon of melted butter

TIP- Add the melted butter last... after mixing all other ingredients together.

Step 4 
Fill muffin tins 3/4 of the way
Bake for 20 minutes

Step 5
While muffins are baking, lets make the delicious glaze.
Mix together 1 cup confectionery sugar, 2 tablespoons of hot water, and 1/2 tsp of almond extract.

Step 6 
Allow cakes to slightly cool before taking out of tin. Then use cookie presses to make mini cakes.
Cut mini cakes in half.

Step 7 
Dip cakes in glazes and enjoy!

Box Seats for Super Bowl Sunday

OK! We are so ready for the Super Bowl! Check out this box seat action.

I mean, check out baby girl's hair, she is clearly ready to rock :)

This is what 2 under 2 looks like when they are both eating... 

We started feeding baby boy about a month ago and we were sharing one high chair for the both of them. When my husband and I are eating dinner, I like to have the kids at the table. We all eat together. So I was having to shuffle both kids between one high chair and either feeding the baby boy in my lap, in his walker or bumbo seat.

We got a new high chair this weekend and look how cute they look together! This is way easier. Now we can all be at the table together.

Sunday mornings are the best with these two :)
