Slow Cooker Spicy Shrimp Chowder


On days home with my babies, I get absolutely annoyed when half the day is consumed by cleaning, doing catch up work, paying bills, making phone calls and all of that other obligatory work. I want to spend the day playing with them, just watching them with my full attention, and soaking up all the new things they are learning to do.

These days I am missing them a little bit extra when I have to run off to work.  Maybe it's because my baby girl is turning 2 this month. I am realizing just how F*&^ing fast the time is really slipping by.

For some reason, I just couldn't wrap my head around the fact that this wasn't her 1st birthday. It's her second!!! She's 2! HOW DID THIS HAPPEN ALREADY! And the thought of that alone had me on the verge of tears.

I don't want to miss any single part of their lives and I am not ready for them to get older...

So today I am voting to go on strike. No chores. Play time only :)

On my days off, I love that I have the time to make a nice meal for dinner. But today I am going crock pot because I want to dump in the ingredients and forget about it.

Let me introduce my little kitchen buddy. He loves to hang out and watch me in the kitchen. Mark my words he will be a man that can cook :) Who doesn't love that?


What we need
3 medium red potatoes
1/2 yellow onion
2 cups of chicken broth
1 can creamy style corn
2 tablespoons of flour
Cajun spice

3 cups of shrimp
1 cup of milk


1st round into the crock pot 
Wash and dice potatoes into desired size pieces.
(I like to do small so they really break down in the soup.)
Add diced onion.
Give a hearty sprinkle of salt, pepper and Cajun spice over them.
Sprinkle 2 tablespoons of flour and toss.
Add the chicken broth and can of creamy corn.
Cook on low for about 6 hours or 2-3 hours on high.


2nd round 
Add milk and shrimp.
(I prefer to use frozen because they are easier to keep on hand and all the work is already done.)
Cook on high for another 45 minutes.

All done!!!
 

I wanted to make tiny bread bowls so I served my spicy shrimp chowder like this....


Which would be totally perfect for a little dinner party. Leave the soup in the crock pot to keep it hot and the bread bowls on the side for guests to help themselves :)

This is great for a cold winter day which I hope are coming to an end. I am ready for spring!

  2. It does go by so fast. I have four - two out of the house and on their own, one in college and my baby will be starting high school! As a working mom, I know exactly how you feel. I made sure the Saturday was fun day and we played and I never worried about all the chores that had to be done. Sunday evening, we cleaned and got ready for the busy week ahead.
